1Adjust rack to the top position and preheat oven to 425 degrees. Wash and dry produce. Cut sweet potatoes into ¼-inch-thick wedges. 2Meanwhile, trim scallions and cut the greens into 1-inch pieces; mince the whites. Peel and mince or grate garlic . Halve potato buns . Slice mini cucumber into ¼-inch-thick rounds. In a small bowl , combine mayonnaise , sour cream , soy sauce using about 1 tsp for 2 servings or 2 tsp for 4 servings, sugar , and sriracha to taste. 3Heat a large drizzle of oil in a large pan over medium-high heat. Add scallion greens and cook, stirring occasionally, until slightly charred and fragrant, 2-4 minutes. Add garlic and cook, stirring, until fragrant, 1 minute more. Turn off the heat; transfer the scallion mixture, including the oil, to a large bowl and season with salt and pepper. Wipe out the pan. -
4In a second large bowl, combine ground beef , scallion whites, and half of fry seasoning , using all for 4 servings. Form into two patties, or four patties for 4 servings, each slightly larger than a burger bun. Season generously with salt and pepper. Heat a drizzle of oil in the same pan over medium-high heat. 5While the patties cook, toast the buns until golden brown. Transfer the sweet potatoes to the bowl with the scallion mixture and toss to combine. Taste and season with salt and pepper if desired. -
6Spread the cut sides of the bottom buns with as much sauce as you like. Fill the buns with the patties, cucumber, and more sauce if desired. Serve with sweet potatoes and any remaining sauce on the side for dipping. -
7Ground beef is fully cooked when internal temperature reaches 160°.
